In the summer, we grill as much as possible. Grilled pizza is an easy meal and pizza variations are fun to experiment with and we grill pizzas for a perfect summer gathering. This Grilled Fruit, Basil, and Brie Pizza with Honey Balsamic Glaze is a blast of flavor combination that is so simple to create yet complex in flavor.

Pizza on the grill is quick and delicious for a weeknight meal or a gathering with friends, and this Grilled Fruit, Basil, and Brie Pizza with Honey Balsamic Glaze pairs well with both CK Mondavi’s Merlot and Pinot Grigio.
Grilled Fruit, Basil, and Brie Pizza with Honey Balsamic Glaze
Pizza Ingredients
- 1/2 pound of pizza dough
- 16 basil leaves, chopped and divided
- 8 oz. of brie, thinly sliced
- 1 1/2 cups of strawberries, sliced
- 3/4 cup blueberries
Honey Balsamic Glaze
- 1/2 cup balsamic vinegar
- 3 tablespoons honey
Directions
- To make the Honey Balsamic Glaze, add the honey and balsamic vinegar to a small saucepan and simmer over medium heat until reduced by about half, 10 to 15 minutes. Remove from heat and set aside.
- Preheat the grill to high heat.
- Line a pizza stone with the pizza dough. I usually use a little cornmeal to keep the dough from sticking.
- Top the pizza dough with the brie slices. Add the strawberries and blueberries and finally half of the basil. Ensure the toppings are spread evenly. Drizzle a little of the honey balsamic glaze if you want a bit of a smoked balsamic flavor (optional)
- Grill for 5-10 minutes until the crust is cooked and the brie is melted.
- Remove the stone from the grill. Top with remaining basil.
- Drizzle the honey balsamic glaze on top to finish the pizza.
