Toffee Chip Pumpkin Bread Recipe

Fall is here and that means if you love pumpkin, you'll find all sorts of pumpkin recipes flooding the internet. Here's hearty version of a pumpkin bread with toffee chips.

Toffee Chip Pumpkin Bread

Toffee Chip Pumpkin Bread Recipe

Ingredients

  • 2 eggs
  • 1/2 cup water
  • 1/2 of 15. oz. can pumpkin puree
  • 1 1/2 cups butter, room temperature
  • 1 cup toffee chips (I used Heath Bar chips)
  • 2 cups whole wheat flour
  • 1 1/4 cups sugar
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. nutmeg

Directions

Preheat the oven to 350 degrees F. Grease and flour a bread loaf pan.

In a small bowl, beat the eggs. Whisk in water, pumpkin, and butter. Set aside.

In a large bowl, combine flour, sugar, baking soda, salt, cinnamon, and nutmeg. Mix well.

Add egg mixture to dry ingredients and mix until all ingredients are combined. Batter will be thick.Toffee Chip Pumpkin Bread Recipe

Gently mix in about 1/2 of the toffee chips.

Cook for 60 minutes or until cake tester comes out clean.

    WOW pumpkin AND toffee? I can’t imagine how incredible this must taste! If I can find away to make this without using dairy I will be trying it ASAP!

    This is intriguing! I often see pumpkin mixed with chocolate chips and think that is a no-no. But toffee chips – sure!
