Fall is here and that means if you love pumpkin, you'll find all sorts of pumpkin recipes flooding the internet. Here's hearty version of a pumpkin bread with toffee chips.
Toffee Chip Pumpkin Bread
Ingredients
- 2 eggs
- 1/2 cup water
- 1/2 of 15. oz. can pumpkin puree
- 1 1/2 cups butter, room temperature
- 1 cup toffee chips (I used Heath Bar chips)
- 2 cups whole wheat flour
- 1 1/4 cups sugar
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. ground cinnamon
- 1/2 tsp. nutmeg
Directions
Preheat the oven to 350 degrees F. Grease and flour a bread loaf pan.
In a small bowl, beat the eggs. Whisk in water, pumpkin, and butter. Set aside.
In a large bowl, combine flour, sugar, baking soda, salt, cinnamon, and nutmeg. Mix well.
Add egg mixture to dry ingredients and mix until all ingredients are combined. Batter will be thick.
Gently mix in about 1/2 of the toffee chips.
Pour the batter into the prepared bread loaf pan. Make a well in the batter and add the remaining toffee chips in the well.
Cook for 60 minutes or until cake tester comes out clean.
Allow the bread to cool in pan for about 15 minutes before removing to wire rack to cool.
