Baileys Irish Cream Cupcakes

These delectable Baileys Irish Cream Cupcakes—chocolate cupcakes made with Baileys Irish Cream finished with slightly spiked Baileys Irish Cream Buttercream frosting—are perfect for St. Patrick's Day or any day!

Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1/4 cup Bailey’s Irish Cream
  • 3/4 cup milk
  • 1/2 cup vegetable or canola oil
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1 cup boiling water

Frosting

  • 1 cup (2 sticks) softened butter
  • 1/8 tsp. salt
  • 3 cups powdered sugar
  • 3 tbsp. Bailey’s Irish Cream

Instructions

  1. Preheat oven to 350º F.

  2. Line a cupcake pan with cupcake liners

  3. In a bowl combine flour, sugar, cocoa, baking powder, baking soda, and salt.

  4. Whisk to combine.

  5. Add milk, Baileys Irish Cream, oil, eggs, and vanilla to flour mixture and mix together on medium speed until well combined.

  6. Reduce speed and carefully add boiling water

  7. Beat on high speed for about 1 minute.

  8. Scoop 1/4 cup of batter into cupcake liners and bake for 20–25 minutes or until a toothpick inserted in the center comes out clean.

  9. Scoop 1/4 cup of batter into cupcake liners and bake for 20–25 minutes or until a toothpick inserted in the center comes out clean.

  10. Remove from the oven and allow to cool for about 30 minutes before frosting.

Frosting Directions

  1. Cream butter and salt until fluffy.


  2. Mix in 1 cup of the powdered sugar, then stir in Bailey’s Irish Cream.

  3. Mix in remaining powdered sugar and mix until thoroughly combined.

  4. Pipe onto cool cupcakes using desired decorating tip.
