Üllo is a revolutionary wine purifier that filters sulfites with Selective Sulfite Capture technology to restore wine to its natural taste—as if you opened the bottle right at the vineyard. It is estimated that 3 million Americans may be sensitive to sulfites. The 2016 Dead Horse is created using fruit from Washington’s premier cabernet sauvignon vineyards. Mature sites Ciel du Cheval, Kilpsun, and Red Willow provide the texture, nuance, and character, while the younger vineyards like Obelisco, and custom plantings from Quintessence add purity, vitality, and structure to this flagship wine. After finishing primary and malolactic fermentation, the wine is aged 21 months in 74% new French oak barrels. The 2016 Dead Horse is 91% cabernet sauvignon, 4% merlot, 3% Cabernet Franc, and 2% petit verdot.
The 2016 Long Haul is created primarily of merlot from Red Willow Vineyard in Yakima Valley. With an average vine age of 25 years, and planted on ancient soils that were above the Missoula floods, Red Willow merlot offers a savory aromatic profile and a complex depth and intensity on the palate. The wine is lightly pressed to barrel, where it finishes primary and malolactic fermentation and is aged for 21 months in 64% new French oak. The 2016 Long Haul is 80% merlot, 9% cabernet franc, and 3% petit verdot.
The 2016 Little Sister is made using fruit from Red Willow and Phinny Hill, two world class vineyards that produce compact clusters with small berries leading to wonderfully rich and concentrated aromas and flavors. This stunning merlot is lightly pressed to barrel, where it finishes primary and malolactic fermentation and is aged for 21 months in 44% new French oak. The 2016 Little Sister is 100% merlot.
The 2017 Chardonnay is made using three clones grown on the north slope of Olsen Vineyards at over 1200 feet of elevation in diverse soils that offer a dynamic climate perfect for chardonnay. Clone 548 is low yielding and offers great aromatic intensity and palate weight. Clone 76 provides an elegant aromatic profile with focused acidity. And clone 809 is a chardonnay musqué clone known for its highly perfumed, muscat like, aromatic and intense presence in the palate. The wine is aged in 46% new French oak, 40% used French oak and 14% stainless steel. This wine is 100% chardonnay.

2017 Petillant Naturel: Start your guests off with a little natural bubbly and let the snacking begin! The winemaking team was intrigued by Pétillant-Naturel as a style of winemaking, thus it was first born to William Chris in 2014. This wine is unique in that it is lightly bubbly and often cloudy because fermentation is finished inside the bottle and does not experience filtration. A crown cap is used because it follows the true Ancestrale Méthode.
2017 Skeleton Key White: Essences of roasted pineapple, buttery custard, and lemon tickle the nose. Medium-bodied, this white wine evokes starfruit, passionfruit, and guava on the palate.

2015 Toccata Classico
Super Tuscan became a style in Italy during the 1970s when Sangiovese became the required majority variety in a Chianti labeled and varieties such as Cabernet Sauvignon and Merlot needed a place in the blend. The style found its way to our California shores in part due to those similarities between the climates in Tuscany.
With the 2015 Toccata Classico, winemaker Megan McGrath Gates made her interpretation of a Super Tuscan style. This wine has a good sense of tannin and body while showcasing red and black fruit, black cherry, smoky leather, earth, and spice. The blend is 50% Sangiovese, 30% Cabernet Sauvignon, 5% Merlot, 5% Cabernet Franc, 5% Freisa, and 5% Petit Verdot. The fruit comes from the Lucas & Lewellen owned Los Alamos Vineyard and Valley View Vineyard in Santa Barbara County.

Clear Creek Distillery Pear Brandy
Their Pear Brandy is made in the tradition of France’s classic Eau de Vie de Poire Williams. Bartlett pears grown just an hour away in the Hood River Valley are crushed at their absolute peak of ripeness. This whole fruit mash is carefully fermented, and the spirit is distilled in our German-made pot stills. It takes 20 pounds of pears to make one 750ml bottle of Pear Brandy. Inspired by the obscure Alsatian spirit Eau de Vie de Bourgeons de Sapin made from pine buds, our Douglas Fir Brandy is truly a tree in a bottle. It took ten years of experimentation to successfully capture the true essence of Oregon’s state tree.
This brandy, also known as eau de vie is made from bright green springtime Douglas fir buds, hand-picked, and immediately infused in our clear very delicate and aromatic brandy. This maceration is then re-distilled and re-infused with fresh new buds, giving the spirit its vibrant green hue from the Douglas fir’s natural chlorophyll. No artificial color has been added.
