Boy, I sure could get used to living in the tropics. I absolutely love fresh fruit, especially tropical fruits. Passion fruit, mango, and pineapple have always been some of my favorites.
For afternoon snack, our meeting attendees were served the most delicious and new-to-me treat. It consisted of fresh fruit (papaya, watermelon, cantaloupe, and pineapple) and was topped with a cream that tasted just like freshly whipped cream (but was a little more liquidy than whipped cream) and soft, shredded cheese that reminded me of mozzarella. I was surprised at how well the shredded cheese went with the fruit and cream. It added a hint of saltiness without tasting “cheesy.” I’m genuinely looking forward to having this again before I head back to the U.S.
