Summer is the perfect time for cold sandwich salads. This Lemon Poppy Seed Chicken Salad is a perfect summer salad recipe. It can be served as a sandwich filling or on top of a green salad. This is a PALEO recipe if served on a bed of lettuce or other paleo option and homemade paleo mayo is used. It’s also be gluten free if served on a gluten free roll or bread or salad greens.

Lemon Poppy Seed Chicken Salad
Ingredients:
- 3 baked, grilled, or rotisserie chicken breasts, cubed
- 1 medium green apple, diced
- 2–3 green onion stalks, chopped
- 1/4 cup pecans, chopped
- 1/2 cup mayonnaise
- 1-1/2 tbsp. honey
- 1-1/2 tbsp. lemon juice
- 1 tbsp. Dijon mustard
- 1 tsp. poppy seeds
- 1/2 tsp. onion powder
- Pinch of salt
Directions:
- Mix mayonnaise, honey, lemon juice, Dijon mustard, poppy seeds, onion powder, and salt in a medium mixing bowl and stir to combine.
- Add diced chicken, green apples, pecans, and green onions and stir to combine.
- Serve on rolls or a bed of lettuce.
