Today was cereal with milk for breakfast again as part of the Live Below the Line Challenge we are participating in. Our kids eat cereal with milk for breakfast almost every school morning, so it wasn’t a big deal for them to have it on the weekend. They were happy until “other” breakfast was cooked. Cereal would have gone over fine, except that the two non-participating household members had an amazing omelet for breakfast. I won’t lie…I was a bit jealous myself of the smell of the cage-free eggs with fresh Cabot Cheddar, fresh green pepper, and chopped ham sautéing away in the frying pan. Our house still smelled like wonderful omelet breakfast for an hour after they were done eating. I imagine this is what it’s like for kids at school who don’t have enough to eat…they see their school friends with delicious, healthy, and filling lunches and long for something else.
Right before lunch, the girls were “starving.” They ate their rice cakes and Skippy peanut butter and then had mango for “dessert.”
By mid-afternoon, we were all hungry again. Time to make homemade potato chips! We used three of the small white potatoes in our 3 lb. bag to make the chips. We have a Microwave Chip Maker and Simple Slicer from Pampered Chef. You basically slice the potatoes very thinly and cook them on the Microwave Chip Maker trays for 3 to 4 minutes with just a bit of salt. They are so tasty and a quick healthy snack. The kids love them.
For dinner tonight, we’ll be making Bubble and Squeak, a traditional English dish made with the shallow-fried vegetables. We’ll make ours with potatoes, cabbage, and a little onion.
