Mmmmm Baileys Irish Cream Cupcakes. I’m a fan of Baileys Irish Cream any time of year, but there’s something about Baileys Irish Cream around St. Patrick’s Day that’s extra appealing.
How about a little boozy baking for St. Patty’s Day with these delectable Baileys Irish Cream Cupcakes—chocolate cupcakes made with Baileys Irish Cream finished with slightly spiked Baileys Irish Cream Buttercream frosting? Absolutely divine.

Baileys Irish Cream Cupcakes
Ingredients
- 2 cups all-purpose flour
- 2 cups sugar
- ¾ cup unsweetened cocoa powder
- 2 tsp. baking powder
- 1½ tsp. baking soda
- 1 tsp. salt
- ¼ cup Baileys Irish Cream
- ¾ cup milk
- ½ cup vegetable or canola oil
- 2 eggs
- 1 tsp. vanilla extract
- 1 cup boiling water
Directions
- Preheat oven to 350º F.
- Line a cupcake pan with cupcake liners
- In a bowl combine flour, sugar, cocoa, baking powder, baking soda, and salt.
- Whisk to combine.
- Add milk, Baileys Irish Cream, oil, eggs, and vanilla to flour mixture and mix together on medium speed until well combined.
- Reduce speed and carefully add boiling water
- Beat on high speed for about 1 minute.
- Scoop 1/4 cup of batter into cupcake liners and bake for 20–25 minutes or until a toothpick inserted in the center comes out clean.
- Remove from the oven and allow to cool for about 30 minutes before frosting.

- 1 cup (2 sticks) softened butter
- 1/8 tsp. of salt
- 3 cups (330g) powdered sugar
- 3 tbsp. Baileys Irish Cream
Directions
- Cream butter and salt until fluffy.
- Mix in 1 cup of the powdered sugar, then stir in Baileys Irish Cream.
- Mix in remaining powdered sugar and mix until thoroughly combined.
- Pipe onto cool cupcakes using the desired decorating tip.

I m a huge fan of Baileys, it is one of the few alcohol things I will drink. I use it in coffee when I have a cold and it works (try it) Hubby likes Baileys too. The cupcakes sound delicious, I would try them!

I baked mini-cupcakes and it made about 75. There was only enough frosting to frost about half of them, generously but not as extreme as in the photos. I sprinkled them with mini chocolate chips. They were delish.

Is this something that the alcohol burns off and children can eat or is it strictly for adults?

That is a super good question! In the cupcakes, it cooks out. The frosting isn’t cooked, so frosting I would not serve to kids. You could make these with a different frosting for kids, though, if you wanted to make an adult and a kid batch.

I baked these for St. Patrick’s Day and they turned out absolutely perfect! I live at 6800 feet so my cupcakes always want to sink in once I pull them out of the oven so I was thrilled that I nailed the altitude adjustments on my first try. I subtracted 3 tablespoons of sugar, and used 1 teaspoon of bakibg powder and 3/4 teaspoon of baking soda. I also used melted butter in place of the oil.

I made this recipe yesterday and It’s great. Love it, really tasty. I love Baileys. I made 12 cupcake and 1 9″ round cake. I added 1 oz of Baileys into the butter icing. I froze the cupcakes for later.
